Blueberry Buckle

  1. Preheat oven to 350°F; grease 8 x 8 or 9 x 9 pan.
  2. Thoroughly cream shortening and ½ cup sugar in large bowl.
  3. Add egg; mix well.
  4. Sift 2 cups flour, baking powder, and salt in medium bowl.
  5. Add to creamed mixture alternately with milk.
  6. Pour into pan; sprinkle blueberries over batter.
  7. Combine 2 cups sugar, ½ cup flour, cinnamon, and butter to form crumbly topping; sprinkle over blueberries.
  8. Bake 45–50 minutes or until toothpick inserted in center comes out clean.
  9. Serve warm. Great with vanilla ice cream or cream!
