Pappardelle with Brown Butter Sage Sauce

  1. Start cooking pappardelle.
  2. Sauté onion in dry, non-stick pan.
  3. Add garlic and olive oil to lightly brown.
  4. Add sherry and reduce by half.
  5. Add butter and cook until nicely browned and nutty-scented.
  6. Immediately remove from heat and add parsley, sage, cooked bacon, Parmesan, salt, and pepper.
  7. Stir well, add pappardelle, and toss very well.

Notes

  • Prepare the parsley, sage, bacon, and parmesan before beginning to sauté the onion.
