Shrimp Scampi

  1. Prep all ingredients before cooking. The shrimp cooks quickly and will overcook if you prep as you go along.
  2. Heat olive oil and 1 tablespoon butter in large pan or skillet. Add garlic. Saute until fragrant (about 30 seconds); don’t let it brown.
  3. Add shrimp and season with salt/pepper. Saute for 1-2 minutes on one side (until just beginning to turn pink).
  4. Flip the shrimp and immediately pour in wine and add red pepper flakes.
  5. Bring to a simmer for 1-2 minutes or until wine reduces by about half and the shrimp is cooked through, being careful not to overcook.
  6. Stir in 1 tablespoon butter, lemon juice, and parsley. Remove from heat immediately.

Notes

  • Great served over rice or pasta (I like angel hair).
