Split Pea Soup

  1. Put the split peas and water into a large pot. Bring to boil over high heat.
  2. Cover, reduce heat to low, and simmer for 45 minutes.
  3. Transfer peas to a bowl; rinse pot.
  4. Heat oil over medium-high heat.
  5. Add the onion, garlic, carrot, and celery and saute for 3 to 4 minutes.
  6. Add the split peas, broth, miso, bay leaf, and liquid smoke. Cook for 15 minutes or until the vegetables are tender.
  7. Remove from heat. Season with salt and pepper to taste.
